Cleaning the ice machine

The most important thing to remember is ice is classed as food and should be treated as such.

The ice machine should be cleaned once a week and the paperwork signed and stored in your food safety book

Manufacturers guidelines should be followed on cleaning but essentially you need to completely empty the machine/drain it down then clean using sanitiser rinsed and dried with clean disposable cloth. Make sure any parts that come apart are done so before cleaning and put back together as each item is cleaned. Remember the drain plug !!
